- ½ cup unsweetened applesauce
- ½ scoop vanilla whey protein powder
Instructions
1. Make the Crust
- Preheat oven to 350°F (175°C).
- In a bowl, mix oat flour, whey protein, baking powder, and cinnamon.
- Add coconut oil (or Greek yogurt), egg, honey, and mix well.
- Gradually add water until a dough forms.
- Press into a greased 9-inch pie dish, forming an even crust. Pre-bake for 5-7 minutes to firm it up.
2. Prepare the Filling
- Toss sliced apples with lemon juice, cinnamon, nutmeg, sweetener, cornstarch, and applesauce.
- Mix in whey protein powder until well-coated.
3. Assemble & Bake
- Pour the apple filling into the pre-baked crust.
- Optionally, top with an extra oat-flour crumble (oats, protein, and a little coconut oil).
- Bake for 25-30 minutes until apples are soft and the crust is golden brown.
4. Serve & Enjoy
- Let it cool slightly before slicing. Serve with Greek yogurt or a scoop of protein ice cream!
